Roast Brassicas with Feta Green Goddess Sauce

I try to make a big batch of roast vegetables every week to have as an easy side with different proteins. They're really simple but really delicious. Here I use brassicas (mixed broccolis & cauliflowers) but you can sub your favorite (sweet potato, baby potato, etc). Just make sure you cut / prep them to be uniform in size and also make sure you don't overcrowd them on the pan or they will steam vs crisp up. If you're doing a big batch for the week, divide them between 2 sheet pans.

This green goddess sauce is next level delicious, and doubles as a great salad dressing or sauce for roast salmon or chicken.

Both of these are great meal prep items and will keep a few days in the fridge.

Gluten free and vegetarian. Serves 4 as a side.
