For Frying

jar
raspberry jam
or strawberry jam

confectioners sugar
or powdered sugar

Directions

Step 1

In a small bowl, combine warm milk and melted butter. Sprinkle yeast over the milk and stir to combine. Let sit for about 10 minutes.

Step 2

In the bowl of a large food processor combine flour, sugar, and salt. Add milk and egg yolks. Process until a smooth dough forms.

Step 3

Place the dough in a lightly greased bowl. Cover and let rise until doubled (about 1 hour) or overnight if time permitting.

Step 4

On a lightly floured surface, roll the dough until it is 1/2 inches thick. Cut with a 3 inch circular cutter and allow the cut doughnuts to rise for about 30 minutes.

Step 5

In a large saucepan, heat 3 inches of canola oil over medium heat to maintain a temperature of 180 degrees Celsius. Fry the doughnuts for an estimated 4 min per side, until golden brown. Remove with a slotted spoon to a plate lined with a paper towel. Don’t overcrowd your pan- about 3 at a time.

Step 6

Let it cool.

Step 7

Fit a pastry bag with a small to medium tip and fill with jam. Use a toothpick to poke a hole in the side of each doughnut and pipe in the jam.

Step 8

Top with powdered sugar.
