This is my go-to work from home lunch when I only have a few minutes to prep, but want something healthy and filling. I make a big fresh arugula salad with cherry tomatoes, and persian cucumbers, and if I want to jazz it up I'll add some olives and feta.
Top it all off with a really simple Meyer lemon vinaigrette that keeps all week in the fridge, and serve it with your favorite main / protein.
Serves 2 as a side, and scales really easily. Gluten Free, Vegetarian, Vegan and Dairy Free.
