I love a soy/tamari, lime and sesame oil dressing dressing, and the crunch of this salad with cashews, zucchini, carrots & romaine. I like to make this salad when I have some leftover veggies in the fridge and top it with some tofu (or if not keeping vegetarian / vegan top it with some leftover chicken). You could even get some pre-made or rotisserie chicken from your local store and save some extra time in this recipe to have a delicious and satisfying lunch or dinner ready.
You can prep all the components of this salad in advance and eat it throughout the week, but I would wait to dress the salad until you're ready to eat. This is also gluten free since I use tamari in the dressing. You can sub soy sauce for tamari if you're not keeping it gluten free.
