These take 15 minutes to prep, 15 minutes to bake, and they will be gone in even less time. Use store bought puff pastry, Boursin cheese, homemade or store bought pesto, and sautéed onions and zucchini to make the most delicious vegetarian dinner party dish. I also love to make them with a big batch of roasted tomato soup in lieu of grilled cheese. If there are leftovers, which likely won't be the case, they are amazing reheated in the morning for breakfast on their own or with a fried egg. To reheat, just pop them back in the oven for 5 minutes at 350F.
If you're making these ahead for a dinner party, assemble them up to the baking step and pop in the fridge for an hour or in the freezer if longer, then just transfer right to the oven when ready to bake.
Serves 4-6 as a side. Vegetarian. Vegan optional if you use vegan puff pastry, vegan pesto and vegan cream cheese spread (or skip the cheese)
