Flädlesuppe is a Specialty from Swabia: a simple soup consisting of thinly cut strips of German pancakes (called Flädle in Swabia or Eierkuchen, Pfannkuchen, Frittaten in other regions of Germany or Austria).

Flädlesuppe is simple to make and is simply delicious.

Flädlesuppe is a heartwarming specialty from Swabia in southern Germany. It’s a simple, delicious soup made with thinly sliced strips of German-style pancakes—known as Flädle in Swabia (also called Pfannkuchen, Eierkuchen, or Frittaten in other parts of Germany and Austria).

This is a classic dish from Grandma’s kitchen, often served as a comforting first course or a warming meal on chilly days. The method is delightfully simple: slice the pancakes into fine strips, place them in a bowl, and pour over hot, clear broth. The pancake ribbons soften into a tender, slightly chewy texture that’s deeply satisfying. Top with a sprinkle of fresh herbs, and serve immediately.

Bonus tip: The pancakes can be made in advance—just store them in the fridge until you're ready to use them.
