This pasta has become a regular weeknight dinner in our house. It uses a handful of ingredients, most of which are pantry staples, and can be on the table in under 30 minutes. If you can’t or prefer not to eat bacon, you can easily skip it – just sauté the shallot, garlic and pepper flakes in 2 T of olive oil until softened before moving on to the next step.

This dish is a great appetizer or starter course for a summer dinner party, perfect as a stand-alone dinner, or a side with grilled chicken, steak or vegetables. You can use gluten free pasta if you prefer, and skip the parmesan for a dairy-free dinner!

Serves: 2 as a main, 4 as an appetizer.

slab or thick cut bacon, cubed
diced shallot (~1 small shallot)
garlic, peeled & chopped
red pepper flake
fresh corn
halved cherry tomatoes

baby arugula (~3 ounces)
