An easy weeknight dinner, these Korean inspired meatballs are fun, tasty, made with pantry staples, and a great way to spice things up in under 30 minutes.
Pair with rice or noodles and a quick stir fried veggie, and you'll have a well balanced dinner!
Combine in a medium mixing bowl - gojuchang, brown sugar, salt, soy sauce, and egg. Beat together until combined, then add in the ground beef and crushed crackers. Mix well but try not to overmix (once the mixture looks homogenous, you can stop).
Form into 1.5” diameter balls, using water to wet your palms as needed to prevent sticking.
In a small saucepan, combine all sauce ingredients, bring up to a boil, and let simmer for 4-5 minutes, or until slightly thickened. Set aside.
Brown the formed meatballs on low-medium heat to get a slight brown sear, about 3 minutes on each side. Add the sauce to the meatballs, and let simmer covered for another 10 minutes.
Plate meatballs, garnish with green onions and sesame seeds, and enjoy!
