OK so this a very delicious summer-y dish with a bit of heat - but it doesn’t have to be if that’s not your thing. Mild Italian sausages are a fine substitute and the amount of jalapeno should be toggled down if you’re sensitive. That being said, this dish has a good amount of sweetness from the charred (caramelized) corn, sweet paprika and quickly sauteed shallots.
Whenever I cook sausages I let them sit out at room temperature for about 20-30 minutes (or a little longer) so that they cook more evenly and have a way less chance of bursting open - and that’s what I ask you to do here too.
