This recipe is the perfect recipe for those that don't like pumpkin pie. It can be made up to 3 days in advance and is a total crowd pleaser. I know caramelizing sugar can seem scary but just watch the bubbles for your cue - when the bubbles are slow and big, then it means the caramelized brown sugar is ready.

You can make these pot de cremes up to 3 days in advance, just let cool then wrap in plastic and store in the fridge.
You can use whatever oven safe individial container you have. Mini Weck or mason jars would be great here too.
