Nước chấm is a common name for a staple fish sauce condiment on Vietnamese dining tables. Naturally, the ingredients are reflective of the province it is rooted in. This version is my family recipe that is done in the Miền Tây (Southwest) Vietnam style; with lots of aromatics, spice, and sweetness.
Mince ginger, garlic, and shallot
In a food processor (or blender) add 1 cup Lemon Juice, 2 tbsp Shallot, 2 tsp Garlic, and 2 tsp Ginger
Transfer mixture to a separate bowl
Then add 1/2 cup Son Fish Sauce, 1/2 cup Coconut Water, and 2 tsp of sambel olek
Last, season the sauce with 3 tbsp Organic Sugar (or 1/3 tsp stevia)
