A glass of wine and a bowl of marinated olives are the easiest way to whet your guests' appetite while you finish cooking in the kitchen.

We use two kinds of olives for this preparation, small, black San Remo olives from Liguria, and large, green Nocellara del Belice olives from Castelvetrano, Sicily. But any mix of good-quality black and green olives will work.

Makes ~2-3 cups (depending on the size of your olives).
