I try to do a version of this dish every year. I am inspired by San Francisco and all it has to offer. There is a large Mexican population and they make some of the most amazing food and we living in SF are lucky to be able to eat what they have to offer. There are many ways I am inspired to create dishes, one of the best is my stomach. I go eat all over the city on my days off and come back to work with may ideas and inspirations. This dish is a great example of that.
