Ghapama is the national dish of Armenia though the word is a cognate of a Turkish word. There are different versions of it cooked everywhere across the Spice Road but our recipe is mostly inspired by the versions we have had during our travels in Armenia.

The essence of the dish are the aromas. The cooking medium (the squash) marries with the warming spices, nuts and berries to create a visually appealing, aromatic and decadent vegetarian main dish or a lavish and beautiful side dish.
