Chasen’s became a legendary Hollywood restaurant in the 40’s and 50’s, hosting everyone from Alfred Hitchcock, Clark Gable, and Carol Lombard to Joan Crawford, Ronal Reagan and Jimmy Stewart. Elizabeth Taylor became such a fan of their chili, she paid to have 10 quarts of it shipped on dry ice to the Cleopatra movie set in Rome!
Can you imagine Liz in all her fabulousness, dripping in jewels and Cleopatra’s costume eating a bowl of Chasen’s chili? I love the thought of it, and after making this recipe once, with my own tweaks, I understood her request. The perfection of this chili is in its simplicity. There are no strange ingredient additions--simply a perfect balance of fat, salt, and a little spice.
