I am obsessed with stuffing, so when I found out I was gluten-intolerant I figured Thanksgiving was ruined. Well not so fast, thanks to Mariposa Baking Company. Based here in Oakland, Mariposa makes the most delicious gluten-free baked goods like pain au chocolat and cherry turnovers, and even bagels! But the bread cubes turned me into a customer for life. The first time I used them, I loved the taste and texture. Even better, I was shocked to discover the stuffing’s texture and flavor was still intact for leftovers the next day! (If you’re gluten-free, you’re impressed right now. 😉) Feel free to use whatever type of bread cube you like, my house is Mariposa all the way.
