Labni is yogurt whose whey has been strained out using a cheese cloth.

Smoking is so common that we often forget that it is a Native American cooking technique. Using a cold-smoker we impart flavor on this Eastern Mediterranean staple.

We've included a photo of a 'cold-smoker' that you can easily set up at home and you can apply to any other product onto which you want to impart a smoky flavor on. Smoked salmon is often smoked in a 'cold-smoker' for instance.
