Growing up, my mom always made these delicious cream cheese press sugar cookies for the Holidays. The cream cheese takes a regular sugar cookie to new levels - but the consistency is soft and requires a press.
Two years ago I attempted to make a double batch of my mom's cream cheese sugar cookies and absent-mindedly forgot to double the butter, even though I doubled everything else (I was pregnant at the time, so I blame that). The dough was too stiff to put through a cookie press.
Determined not to waste the huge batch of dough I just made, I realized the consistency was pretty similar to a traditional sugar cookie, so I decided to roll them out instead and cut out Holiday cookies with cookie cutters. The result was truly the best sugar cookie I have ever had - because, well, cream cheese! Also, you can keep combining and rolling out scraps, getting lots of bang for your buck.
So this Holiday Season, give these "Accidental Sugar Cookies" a try!
