This is one of my favorite side dishes to add to any meal! Crispy, savory, and refreshing, these smashed cucumbers are always a crowd pleaser and a great vegetable to add to the spread.
Feel free to double the recipe for the sesame vinaigrette and store this in the fridge to keep on hand.
Wash cucumbers and the cut ends off. Using either a mallet or the back of your knife, smash the cucumber so that you begin to see the skin break. Tear the cucumbers into 2” long pieces.
Place smashed cucumbers in a colander, and toss with a pinch of salt. Let sit for 15 minutes to draw some excess moisture out.
In a separate small bowl, make the sesame vinaigrette. Combine the salt, sugar, rice vinegar, soy sauce, and sesame oil. Whisk together.
Drain any excess water from the cucumbers. Toss the drained cucumbers with a few spoonfuls of the sesame vinaigrette, along with a pinch of red pepper flake. Taste and adjust seasoning as needed.
Top with cilantro and sesame seeds, and enjoy!
