An indulgent purchase of too many summer berries (is there such a thing?) inspired these easy mix-press-toss-crumble-bake bars that are part pie, part cookie, part fruit crisp and all around delicious.
Oats and oat flour combined with butter and warm spices make for a super base and craveable crumble topping. A mélange of peak summer berries gets a perky boost from lemon juice and zest and pair gorgeously with the butter crust/crumble.
Pack them for a picnic (they travel well and eat even better!), dress them up with a pillowy topping of freshly whipped cream (or ice cream) or even serve for breakfast with a dollop of yogurt alongside.
The recipe works beautifully well with chopped up stone fruit too, or a berry-stone fruit combo is also great.
